Crispy Purple Potatoes with Fresh Oregano + Crumbled Egg




Ingredients:
6-8 small purple potatoes, thinly sliced [measures out to about 4 cups]
2 shallots, thinly sliced
1 farm fresh hard boiled egg, chopped
2 tablespoons extra virgin olive oil [or other preferred vegetable oil]
2 tablespoons red wine vinegar
fresh oregano, about 1 tablespoon chopped
pinch of crushed red pepper flakes, optional
sea salt
course ground pepper

Scrub your potatoes well, slice them thinly with an extra sharp knife or mandolin slicer. Place them in a bowl of cold water for about 30 minutes. The water will draw out some of the potato's starch and they'll cook up crispier. In a large saute pan heat the olive oil over medium-low. Spread the potatoes as evenly as you can and cook until browned on one side. Now add the vinegar, shallots, crushed red pepper flakes, sea salt and pepper. Flip the potatoes over to crisp the other side.

After both sides are crispy brown and the potatoes are heated through top them with the fresh oregano and chopped egg. The warm crispy potatoes are the perfect compliment to the cold chopped egg. Try topping this dish with a fresh hunk of goat cheese [not pictured] it's unbelievably delicious! And, if you're into a vegan option, just eliminate the egg altogether. Friends, if you can't find purple potatoes in a store or farmers' market near you, get creative and keep it nutrient packed, try sweet potatoes instead!

Michael Anthony’s Fork-Crushed Purple Majesty Potatoes

 fork-crushed purple potatoes

Ingredients

-1 pound Purple Majesty or other purple potatoes, washed
-4 small shallots, minced
-2 tablespoons fresh-squeezed lemon juice
-6 tablespoons good extra-virgin olive oil (we used half, and it was plenty for us)
-Fleur de sel to taste
-White pepper to taste
-2 tablespoons parsley, chopped

Directions

-In a large pot, cook potatoes with skins on in heavily salted boiling water until tender, approximately 15 minutes.
-Remove potatoes from pot, and peel them while still warm.
-Place potatoes in a large bowl and, using a fork, gently smash them, maintaining a fairly chunky consistency.
-Fold in minced shallots, lemon juice, olive oil, fleur de sel, and white pepper. Finish with parsley.

Roasted Potato and Okra Salad

Ingredients
-2 lb small potatoes such as fingerling, red, or yellow-fleshed
-1 large bunch scallions, halved lengthwise and roughly chopped
-2 large fresh rosemary sprigs, plus 1/2 teaspoon chopped
-1/4 cup olive oil
-2 1/4 teaspoons salt
-1 teaspoon black pepper
-3/4 lb small (2- to 3-inch) okra, heads removed
-1 cup fresh corn (from 1 to 2 ears, I used a combo of frozen kernels plus 1 ear of corn)
-1 1/2 tablespoons fresh lemon juice
-1 tablespoon finely chopped shallot

Directions:

Roast potatoes and okra:
-Put oven rack in middle position and preheat oven to 450°F.
-Halve potatoes lengthwise and toss with scallion pieces, rosemary sprigs, 2 tablespoons olive oil, 3/4 teaspoon salt, and 1/2 teaspoon pepper. Spread potato mixture in a large roasting pan and roast, stirring once, 20 minutes. Stir potatoes and add okra to pan, tossing to coat. Continue to roast until okra and potatoes are tender, about 30 minutes more.
Cook corn while potatoes roast:
-Cook corn in 1 quart of salted boiling water for 3 minutes. Drain and set aside.
Make dressing and assemble salad:
-Whisk together lemon juice, shallot, chopped rosemary, and remaining 2 tablespoons oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large bowl until combined. Discard rosemary sprigs, then add hot potatoes and okra to dressing along with beans, corn, and salt to taste, tossing to combine. Serve hot or warm.

Stuffed Cremini Mushrooms

This is one of my favorite treats—easy to make and easily adaptable!

Stuffed Cremini Mushrooms
Serves 4 (appetizer servings)

Ingredients
1 package cremini (baby bella) mushrooms
1 to 2 tablespoons butter
olive oil
1 half onion, 2 to 3 shallots, or 4 to 5 scallions, all minced
2 to 3 cloves garlic, minced
ground cayenne pepper, to taste
chives, finely chopped, to taste (optional)
⅓ 8-ounce package cream cheese
2 to 3 tablespoons chopped cheddar, mozzarella, or grated Parmesan
breadcrumbs

Directions
1. Preheat oven to 350 degrees. Rinse mushrooms and remove stems from caps. Set caps aside and finely mince mushroom stems.
2. In a small saucepan, melt butter over medium heat. When hot, add mushroom stems, onions, shallots, or scallions, and garlic. Cook until lightly browned. Remove from heat.
3. In a bowl, mix together stems, onions, shallots, or scallions, and garlic with cayenne pepper, chives, cream cheese, and additional cheese.
4. Lightly coat the bottom of the mushroom caps with olive oil. Arrange on a baking sheet and fill with the cream cheese mixture. Top with breadcrumbs and bake in the oven until golden brown. Serve hot.

Cheddar Cauliflower Soup

The following recipe is adapted from La Tartine Gourmande Blog (http://www.latartinegourmande.com/). As always, the author has a few tartine suggestions to go with the meal (a French-style open-faced sandwich): “…a few slices of my favorite bread topped with goat cheese, thin pieces of Alaskan smoked salmon, steamed peels of zucchini and thin slices of pink radish. A few leaves of fresh Thai basil and gomasio complete these quick-to-make tartines."

Cheddar Cauliflower Soup
Serves 4

Ingredients
1 head cheddar cauliflower, washed and cut in pieces
1 large potato, peeled and diced
1 parsnip, peeled and diced
1 stick lemongrass, cut in small pieces
2 tablespoons Thai basil
1 tablespoon coriander, chopped
1 teaspoon grated fresh ginger root
2 garlic cloves
1 shallot
4 cups vegetable broth or water
2 tablespoons canola oil
salt and pepper
crème fraîche to serve (optional)
1 zucchini (for the peels, optional)

Directions
1. Cut and discard the outer part of the lemongrass, and slice the stick.
2. Take a large saucepan and heat 2 tablespoons oil.
3. Add the ginger, lemongrass, garlic and shallot and cook for 1 to 2 minutes on low heat until fragrant.
4. Add the vegetables and cook for 5 minutes.
5. Add the stock (or water) and the coriander. Season with salt and pepper. Cover and cook for 20 minutes. Then add half of the basil and let rest for 2 minutes before mixing the soup in a blender.
6. Serve with the rest of the basil, zucchini strips steamed for 2 min, and a dollop of crème fraîche. Accompany with your favorite tartines.
